The hyacinth bean (Lablab purpureus) is a vine with electric-purple pods. Fast-growing and beautiful, it produces leaves, flowers, pods and roots that are edible. Dry seeds are poisonous and may be eaten only after lengthy boiling. Commonly used as a food crop in the tropics, it offers good nutrition and, of course, tolerates heat extremely well.
